Pasture's Delights Frozen Vanilla Raw Milk Custard
Ingredients- 6 eggs yolks
- 1.5 cups raw milk cream
- 1.5 cups raw milk
- 1 vanilla bean
- 1/2 cup sugar
- 2 Tbsp honey
- Prepare a cold ice water bath.
- Separate egg yolks and discard the whites.
- Carefully pour 1.5 cups of cream from the top of the raw milk and set it aside in the refrigerator.
- In a double boiler, heat 1.5 cups of raw milk to about 175 F.
- Take a vanilla bean and split it lengthwise.
- Scrap out the bean contents with a knife and add it to the raw milk in the double boiler while it is heating up. Throw the husk in as well. You'll remove it later.
- Dissolve the sugar and honey into the hot milk.
- While whisking the egg yolks, slowly ladle half the hot milk into the eggs.
- Slowly return the egg mixture to the double boiler while stirring.
- Reheat mixture to about 175 F and continue to stir until the mixture thickens enough to coat the back of the spoon (3 to 5 minutes).
- Place the top of the double boiler in the cold water bath and cool the mixture as quickly as possible.
- Remove the vanilla bean husk.
- Add the 1.5 cups of raw milk cream that you set aside in the refrigerator.
- Cover and refrigerate for at least 1 hour.
- Add the mix to the ice cream maker, per manufacturer's instructions.
- Serve immediately for soft-serve, or place ice cream in separate container and freeze for 1 hour for a harder consistency.
- Eat plain or top with fresh fruit of choice.

Why use raw milk & then boil it? The health properties of raw milk are greatly reduce when you cook it above 105 degrees F. Confusing!
