How to make frozen custard from
Pasture's Delights raw milk

Pasture's Delights Frozen Vanilla Raw Milk Custard

Ingredients
  • 6 eggs yolks
  • 1.5 cups raw milk cream
  • 1.5 cups raw milk
  • 1 vanilla bean
  • 1/2 cup sugar
  • 2 Tbsp honey
Instructions
  1. Prepare a cold ice water bath.
  2. Separate egg yolks and discard the whites.
  3. Carefully pour 1.5 cups of cream from the top of the raw milk and set it aside in the refrigerator.
  4. In a double boiler, heat 1.5 cups of raw milk to about 175 F.
  5. Take a vanilla bean and split it lengthwise.
  6. Scrap out the bean contents with a knife and add it to the raw milk in the double boiler while it is heating up. Throw the husk in as well. You'll remove it later.
  7. Dissolve the sugar and honey into the hot milk.
  8. While whisking the egg yolks, slowly ladle half the hot milk into the eggs.
  9. Slowly return the egg mixture to the double boiler while stirring.
  10. Reheat mixture to about 175 F and continue to stir until the mixture thickens enough to coat the back of the spoon (3 to 5 minutes).
  11. Place the top of the double boiler in the cold water bath and cool the mixture as quickly as possible.
  12. Remove the vanilla bean husk.
  13. Add the 1.5 cups of raw milk cream that you set aside in the refrigerator.
  14. Cover and refrigerate for at least 1 hour.
  15. Add the mix to the ice cream maker, per manufacturer's instructions.
  16. Serve immediately for soft-serve, or place ice cream in separate container and freeze for 1 hour for a harder consistency.
  17. Eat plain or top with fresh fruit of choice.

Why use raw milk & then boil it? The health properties of raw milk are greatly reduce when you cook it above 105 degrees F. Confusing!
